Belonging to the Nikuya family of Japanese kitchen knives, the Nikuya Gyotu Knife is
the Japanese counterpart of the classic western Chef’s Knife. As a chef’s primary
cutting tool, the Nikuya Gyotu Knife is a multi-tasker. It can prep a wide range of
ingredients and proteins – aromatics, fruits, vegetables, fish, meat or poultry – using
various cutting techniques.
Made from stainless steel grade 420 J2, the Nikuya Gyotu Knife has a fine, smooth
polish and retains its sharpness for a longer period of time. It’s also resistant to
corrosion as well as to frequent cleaning using common household chemicals.
Why Choose the Nikuya Gyotu Knife?
- It has a Koa Wood handle, one of the preferred hardwoods used as knife
handles which is known for its durability.
- The blade has a hardness of about 60 H.R.C as measured on the Rockwell Scale, a key indicator of a blade’s sharpness retention.
